Goseong Pollock, Tender and Flavorful Thanks to the Sea Breeze Drying Method

Goseong, where Gangwon Goseong pollock is produced, has mountains in the northern and southern areas to its west and a relatively long coastline to its east. In addition to receiving strong winds from the sea, it has a large diurnal temperature variation and low humidity levels, making it possible to produce high-quality dried pollock.

Precipitation, Humidity and Sea Breeze

  • Generally speaking, low precipitation and humidity levels are necessary for dried pollock production. The average humidity level of Goseong from December to March, which is the pollock drying season, is around 48.2%, which is relatively lower than that of Samcheok (48.7%) and Inje (62%). This is one of the reasons Goseong is an ideal place for dried pollock production.
  • Also, the average precipitation of Goseong in the pollock drying season between December and March is 172mm, and this is lower than that of Samcheok (184.1mm) and Inje (105mm), which are other primary producers of pollock.
  • Strong and constant winds are an important factor in the production of dried pollocks. The average wind speed in Goseong is 2.8m/s between December and March and this is slightly stronger than the wind speeds in Samcheok (2.4m/s) and Inje (1.8m/s). In Goseong, in particular, a deokjang (outdoor pollock drying site) is built in an area with the ideal wind conditions, and this is why the dried pollocks from Goseong are especially savory and flavorful.

Temperature and Sunshine Duration

  • Temperature and diurnal temperature variation during the drying process have an important impact on the quality of dried pollock. Generally, low temperatures and large diurnal temperature variations are necessary for producing high-quality dried pollock. The average temperature of Goseong between December and March is 1.9℃, which is similar to that of Inje (0.9℃) and lower than that of Samcheok (3.4℃), and this makes it an ideal place for dried pollock production.
  • The diurnal temperature variation during the pollock drying season between December and March is 9.0℃ in Goseong, and this is fairly similar to that of Samcheok (8.6℃) and Inje (11.2℃).
